Chia is an edible seed that comes from southern Mexico. For years, you have thought of chia as a toy a novelty item – chia pets – but chia is more than that. Chia seeds are a highly nutritional food that is packed with Omega 3 and Omega 6 fatty acids. The provide 18 amino acids including lysine and arginine and are a great source of calcium, magnesium, potassium, phosphorus and trace elements – zinc, copper, iron, boron, and strontium. In pre-Columbian times chia seeds were a staple in the Aztec and Mayan diet. Chia seeds were ground into flour, pressed for their oil, and added to water for drinking. Aztec warriors survived on rations of chia seeds. They were easy to carry in small pouches and just a few would provide the stamina and endurance they needed to get through the day.

Chia has a nutlike flavor. You can mix seeds in water and add lime or lemon juice and sugar to make a drink known in Mexico and Central America as “chia fresca.” As with ground flax seeds, you can sprinkle ground or whole chia seeds on cereal, in yogurt or salads, eat them as a snack, or grind them and mix them with flour when making muffins or other baked goods. My thoughts

Love the chia seeds and I was so amazed to find out there were tons of recipes you could use them in including pudding. They are a healthy choice for a snack and they are very filling.   1. Chia seeds…..love, love, love ’em. I soak 1 1/2 T ground chia seeds in water and add it my daily soothie. The seeds fill me up for hours too, and as an added bonus it helos regulate my blood sugar. So many benefits that we all should be eating/drinking these.
